Chickpea Salad:

  • 2 cans (15 ounces each) chickpeas, drained and rinsed
  • 1 cup diced cucumber
  • 1 cup halved cherry tomatoes
  • ½ cup diced red bell pepper
  • ¼ cup finely chopped red onion
  • ¼ cup chopped fresh parsley
  • 2 tablespoons chopped fresh mint (optional)
  • 3 tablespoons olive oil
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon red wine vinegar
  • ½ teaspoon garlic powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Instructions

  1. In a large bowl, combine the chickpeas, cucumber, cherry tomatoes, red bell pepper, red onion, parsley, and mint if using.
  2. In a small bowl or jar, whisk together the olive oil, lemon juice, red wine vinegar, garlic powder, salt, and black pepper until well combined.
