Marinade:
- 1 pound boneless, skinless chicken breasts or thighs
- 2 tablespoons olive oil

- 1 tablespoon chili powder

- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
Additional:
- 8 small corn or flour tortillas
- toppings like shredded cabbage, avocado, cilantro, and cotija cheese
Instructions
- Prepare Marinade: In a medium bowl, whisk together olive oil, lime juice, lime zest, chili powder, cumin, garlic powder, onion powder, smoked paprika, salt, and pepper. Add chicken and toss to coat. Marinate for at least 20 minutes, or up to 2 hours in the refrigerator.
- Cook Chicken: Preheat a skillet or grill over medium-high heat. Cook the chicken for 5–6 minutes per side, or until cooked through and nicely charred. Let rest for 5 minutes, then slice or chop.
- Assemble Tacos: Warm the tortillas, then fill each with chicken and desired toppings. Serve with extra lime wedges on the side.
Notes
- For extra heat, add a pinch of cayenne to the marinade.
