Ground Beef Mixture:
- 1 pound ground beef
- 1 small onion, diced

- 1 (14.5-ounce) can diced tomatoes
- 1 cup frozen corn
- 1 (8-ounce) can tomato sauce
- 1 tablespoon chili powder
- 1 teaspoon cumin
- ½ teaspoon smoked paprika
- Salt and pepper to taste
- 2 cups cooked rice
- 1 cup shredded cheddar cheese
- Chopped green onions and cilantro for garnish
Instructions
- Cook Ground Beef: In a large skillet over medium heat, cook the ground beef until browned, breaking it up as it cooks. Drain excess fat if needed.
- Add Vegetables and Seasonings: Add the onion, bell pepper, and garlic, and cook until softened. Stir in black beans, diced tomatoes, corn, tomato sauce, chili powder, cumin, smoked paprika, salt, and pepper. Simmer until heated through.
- Combine with Rice: Stir in the cooked rice until well combined. Top with cheddar cheese, cover, and cook until melted.
- Garnish and Serve: Garnish with green onions and cilantro before serving.
