  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

For the chimichurri sauce:

  • 1 cup fresh parsley (finely chopped)
  • 1/4 cup fresh cilantro (finely chopped, optional)
  • 4 cloves garlic (minced)
  • 2 tablespoons fresh oregano (chopped) or 2 teaspoons dried oregano
  • 1/2 teaspoon red pepper flakes
  • 1/2 cup olive oil
  • 2 tablespoons red wine vinegar
  • juice of 1/2 lemon
  • salt and black pepper to taste

Instructions

  1. Preheat the grill: Preheat your grill or grill pan to medium-high heat.
  2. Prepare the chicken: Rub the chicken breasts with olive oil, salt, and black pepper.
  3. Grill the chicken: Grill the chicken for 6-7 minutes per side until fully cooked.
  4. Make the chimichurri sauce: Combine parsley, cilantro, garlic, oregano, and red pepper flakes. Stir in olive oil, red wine vinegar, and lemon juice. Season with salt and pepper.
  5. Serve: Top the grilled chicken with chimichurri sauce and enjoy!
