  • 1 cup cornstarch
  • 2 large eggs, beaten

For the Lemon Sauce:

  • 1/2 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 1/2 cup granulated sugar
  • 1/2 cup chicken broth
  • 2 tablespoons soy sauce
  • 1 tablespoon cornstarch mixed with 2 tablespoons water (slurry)
  • 1 tablespoon rice vinegar
  • 1 teaspoon grated fresh ginger
  • 1 clove garlic, minced
  • Sliced green onions and lemon slices for garnish

Instructions

  1. Prepare the Chicken: Pat chicken dry, season, dredge in cornstarch, dip in beaten eggs, and fry until golden and crispy. Drain on paper towels.
  2. Make the Lemon Sauce: Combine lemon juice, zest, sugar, broth, soy sauce, vinegar, ginger, and garlic in a saucepan. Thicken with cornstarch slurry.
  3. Coat the Chicken: Toss the crispy chicken in the lemon sauce until evenly coated.
