For the Chipotle Beef:
- 1 pound ground beef
- 1 tablespoon olive oil
- 1 small onion (diced)
- 2 cloves garlic (minced)
- 2 tablespoons chipotle peppers in adobo sauce (minced)
- 1 teaspoon ground cumin
- ½ teaspoon smoked paprika
- 1 teaspoon salt
- ½ teaspoon black pepper
For the Bowls:
- 4 cups cooked diced or mashed potatoes
- 1 cup shredded cheddar cheese
- ½ cup sour cream
- ¼ cup chopped fresh cilantro
- 2 green onions (sliced)
- Lime wedges for serving (optional)
Instructions
- In a large skillet, heat olive oil over medium heat. Add the diced onion and cook for 3–4 minutes until softened.
- Stir in garlic and cook for 1 minute more.
- Add the ground beef and cook until browned, breaking it up as it cooks. Drain excess grease if necessary.
- Stir in chipotle peppers, cumin, paprika, salt, and pepper. Cook for another 2–3 minutes until well combined and heated through.
- Warm the cooked potatoes and divide them evenly into bowls.
- Spoon the chipotle beef over the potatoes.
- Top with shredded cheddar cheese, sour cream, cilantro, and green onions.
- Serve with lime wedges if desired.
Notes
- You can substitute ground turkey or chicken for a lighter version.
- Roasted sweet potatoes also work well as a base.
- Add black beans or corn for extra texture and flavor.
