Description

Chipotle Beef Potato Bowls are a hearty and flavorful meal featuring spicy chipotle beef served over a bed of creamy mashed potatoes, topped with cheddar cheese, sour cream, and fresh herbs.

For the Chipotle Beef:

  • 1 pound ground beef
  • 1 tablespoon olive oil
  • 1 small onion (diced)
  • 2 cloves garlic (minced)
  • 2 tablespoons chipotle peppers in adobo sauce (minced)
  • 1 teaspoon ground cumin
  • ½ teaspoon smoked paprika
  • 1 teaspoon salt
  • ½ teaspoon black pepper

For the Bowls:

  • 4 cups cooked diced or mashed potatoes
  • 1 cup shredded cheddar cheese
  • ½ cup sour cream
  • ¼ cup chopped fresh cilantro
  • 2 green onions (sliced)
  • Lime wedges for serving (optional)

Instructions

  1. In a large skillet, heat olive oil over medium heat. Add the diced onion and cook for 3–4 minutes until softened.
  2. Stir in garlic and cook for 1 minute more.
  3. Add the ground beef and cook until browned, breaking it up as it cooks. Drain excess grease if necessary.
  4. Stir in chipotle peppers, cumin, paprika, salt, and pepper. Cook for another 2–3 minutes until well combined and heated through.
  5. Warm the cooked potatoes and divide them evenly into bowls.
  6. Spoon the chipotle beef over the potatoes.
  7. Top with shredded cheddar cheese, sour cream, cilantro, and green onions.
  8. Serve with lime wedges if desired.

Notes

  • You can substitute ground turkey or chicken for a lighter version.
  • Roasted sweet potatoes also work well as a base.
  • Add black beans or corn for extra texture and flavor.
