Sweet Potatoes:

  • 3 large sweet potatoes (about 2 1/2 pounds), peeled and cut into chunks

Other Ingredients:

  • 23 tablespoons unsalted butter
  • 12 chipotle peppers in adobo sauce, minced (adjust to taste)
  • 1 cup shredded sharp cheddar cheese
  • 1/4 cup whole milk or cream
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Chopped fresh chives for garnish (optional)

Instructions
