Sweet Potatoes:
- 3 large sweet potatoes (about 2 1/2 pounds), peeled and cut into chunks
Other Ingredients:
- 2–3 tablespoons unsalted butter
- 1–2 chipotle peppers in adobo sauce, minced (adjust to taste)
- 1 cup shredded sharp cheddar cheese
- 1/4 cup whole milk or cream
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Chopped fresh chives for garnish (optional)
Instructions
- Cook Sweet Potatoes: Bring a large pot of salted water to a boil. Add the sweet potatoes and cook for 15-20 minutes until tender. Drain well.
- Mix Ingredients: Return sweet potatoes to the pot. Add butter, chipotle peppers, cheddar cheese, milk or cream, garlic powder, salt, and black pepper.
- Mash and Serve: Mash everything together until smooth. Adjust seasoning if needed. Garnish with chives and serve warm.
