Chipotle Sauce

  • 1 tablespoon chipotle adobo sauce
  • 1/2 cup mayonnaise
  • 1 tablespoon lemon juice
  • 1 clove garlic, minced
  • 1/4 teaspoon coarse salt

Sandwich

  • 1 tablespoon olive oil
  • 2 slices sourdough bread
  • 1/4 avocado, sliced
  • 2 ounces smoked chicken breast, sliced
  • 3 Peppadew peppers, sliced
  • 1 tablespoon fresh chopped cilantro
  • 1 slice Chao creamy original cheese
  • 12 tablespoons chipotle sauce (prepared above)

Instructions

  1. Prepare Chipotle Sauce: In a small bowl, combine chipotle adobo sauce, mayonnaise, lemon juice, minced garlic, and coarse salt. Stir until smooth and evenly mixed. Taste and adjust seasoning if necessary. Set aside the sauce for later use.
  2. Heat Skillet and Prepare Bread: Place a large skillet over medium-high heat. Lightly brush olive oil onto the outer sides of each sourdough bread slice to ensure even browning and crispiness when grilled.
  3. Assemble and Cook Sandwich: Place one slice of bread oil-side-down in the hot skillet. Layer with the slice of Chao creamy original cheese first, then smoked chicken breast slices, sliced avocado, Peppadew peppers, and fresh chopped cilantro. Spread 1 to 2 tablespoons of the prepared chipotle sauce on the inside of the second bread slice and place it chipotle sauce-side-down on top of the sandwich.
  4. Grill Sandwich: Cook until the bottom slice is golden brown and the cheese begins to melt, approximately 3-5 minutes. Carefully flip the sandwich and grill the other side until it is also golden brown and the cheese is fully melted.
  5. Serve: Remove the sandwich from the skillet. Slice the sandwich in half and serve immediately while warm and melty.
