Ingredients
Scale
Chipotle Shrimp
- 1 lb large shrimp, peeled and deveined
- 2 tbsp olive oil
- 1 tbsp chipotle chili powder
- 1/2 tsp smoked paprika
- 1/2 tsp cumin
- 1 garlic clove, minced
- Juice of 1 lime
- Salt & pepper to taste
Bowl Components
- 2 cups cooked white or brown rice (or cauliflower rice for low-carb)
- 1/2 cup black beans, drained and rinsed
- 1/2 cup corn kernels (fresh, canned, or frozen)
- 1/2 cup cherry tomatoes, halved
- 1/2 avocado, sliced
- 2 tbsp chopped red onion
- Fresh cilantro for garnish
- Lime wedges for serving
Lime Crema
- 1/4 cup sour cream or Greek yogurt
- 1 tbsp lime juice
- 1 tsp lime zest
- Pinch of salt
Instructions
- Marinate the shrimp: In a bowl, combine the shrimp with olive oil, chipotle chili powder, smoked paprika, cumin, minced garlic, lime juice, salt, and pepper. Toss well to evenly coat the shrimp and let it marinate for 15 to 20 minutes to absorb the flavors.
- Cook the shrimp: Heat a skillet over medium-high heat. Add the marinated shrimp to the hot skillet and cook for about 2 to 3 minutes on each side until the shrimp turn opaque and develop a slight char. Remove from the heat once cooked through.
- Prepare the lime crema: In a small bowl, whisk together the sour cream or Greek yogurt with lime juice, lime zest, and a pinch of salt until smooth and creamy.
- Assemble the bowls: Divide the cooked rice evenly among four serving bowls. Top the rice with black beans, corn, cherry tomatoes, avocado slices, chopped red onion, and the cooked chipotle shrimp.
- Finish and serve: Drizzle each bowl generously with the lime crema, sprinkle fresh chopped cilantro on top, and serve with lime wedges on the side for extra zing.
Notes
- For a lower-carb option, substitute cooked cauliflower rice for the rice.
- If fresh shrimp is unavailable, thawed frozen shrimp works well.
- Adjust chipotle chili powder to taste to control the spice level.
- Can be served warm or at room temperature, making it great for meal prep.
- For dairy-free option, substitute lime crema with coconut yogurt or vegan sour cream.
