Instructions

  1. Melt Chocolate: In a medium microwave-safe bowl, add the dark chocolate chips and coconut oil. Microwave in 1-minute increments, stirring between each, until the mixture is melted and smooth. Set aside.
  2. Toast Almonds and Coconut: Preheat a large skillet over medium heat. Add the slivered almonds and coconut flakes. Toast them until golden brown, stirring frequently to avoid burning. Remove from heat and set aside.
  3. Prepare Loaf Pan: Line a 9×5 inch loaf pan with parchment paper to ensure easy removal of the bars once set.
  4. Layer Berries and Toppings: Add the chopped strawberries, blueberries, and raspberries into the loaf pan in layers. Sprinkle the toasted almonds, coconut flakes, and chia seeds evenly over the berries for crunch and nutrition.
  5. Drizzle Chocolate: Evenly drizzle the melted chocolate mixture over the layered berries and toppings. Tap the loaf pan gently on the counter a few times to help everything settle together uniformly.
  6. Freeze: Place the loaf pan in the freezer and allow the bars to freeze for 7 hours, or until fully set and firm.
