Description

Cake:

  • 1 3/4 cups all-purpose flour
  • 3/4 cup unsweetened cocoa powder
  • 2 cups granulated sugar
  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup whole milk
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
  • 1/2 cup sour cream (optional for extra moisture)

Chocolate Frosting:

  • 1 cup unsalted butter (softened)
  • 3 1/2 cups powdered sugar
  • 1/2 cup unsweetened cocoa powder
  • 1/2 teaspoon salt
  • 2 teaspoons vanilla extract
  • 1/4 cup heavy cream (plus more as needed)

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans or line with parchment paper.
  2. In a large mixing bowl, whisk together flour, cocoa powder, sugar, baking powder, baking soda, and salt.
  3. Add eggs, milk, oil, and vanilla extract to the dry ingredients. Beat on medium speed for 2 minutes until smooth. Stir in boiling water. Fold in sour cream if using. Pour the batter into the prepared pans.
  4. Bake for 30–35 minutes or until a toothpick inserted into the center comes out clean. Cool the cakes in the pans for 10 minutes, then turn out onto wire racks to cool completely.
  5. To make the frosting, beat the softened butter until creamy. Sift in the powdered sugar and cocoa powder. Add salt, vanilla, and cream, and beat until fluffy. Add more cream if needed for desired consistency.
  6. Frost the cooled cakes and decorate as desired.

Notes

  • This cake can also be made in a 9×13-inch pan (adjust bake time to 35–40 minutes).
  • Store frosted cake covered at room temperature for up to 3 days or refrigerate for longer shelf life.
