Description

Brownie Mixture:

  • 1 box brownie mix (plus ingredients listed on box)

Filling:

  • 24 maraschino cherries (drained and patted dry)
  • 1/2 cup cream cheese (softened)
  • 1 cup powdered sugar

Chocolate Coating:

  • 10 oz semi-sweet or dark chocolate chips
  • 1 tablespoon coconut oil or vegetable shortening

Garnish (optional):

  • Sprinkles or crushed nuts

Instructions

  1. Prepare Brownies: Prepare and bake the brownies according to package directions in a 9×13-inch pan. Let them cool completely.
  2. Make Filling: Mix softened cream cheese and powdered sugar until smooth. Crumble the cooled brownies into a large bowl and mix in the cream cheese mixture until a thick, dough-like consistency forms.
  3. Assemble: Scoop about 1 tablespoon of the brownie mixture, flatten it in your palm, and place a maraschino cherry in the center. Wrap the brownie mixture around the cherry and roll into a ball. Repeat with remaining mixture and cherries.
  4. Freeze: Place the brownie balls on a parchment-lined tray and freeze for 20–30 minutes.
  5. Coat in Chocolate: Melt the chocolate chips with the coconut oil, dip each brownie bomb into the melted chocolate, coating completely, and return to the tray. Add sprinkles or crushed nuts while the chocolate is still wet, if desired.
  6. Chill: Chill in the refrigerator until set.
