Description

Delight in these festive Chocolate-Dipped Easter Rice Krispie Treats, combining the classic chewy texture of marshmallow and Rice Krispies with a luscious coating of dark and white chocolate. Perfect for spring celebrations, these treats are easy to make and fun to decorate with colorful sprinkles.

Ingredients

Scale

Base Ingredients

  • 8 tablespoons butter
  • 16 cups mini marshmallows (divided)
  • 10 cups Rice Krispies cereal
  • ½ teaspoon salt

Chocolate Coating

  • 6 ounces high-quality dark chocolate
  • 6 ounces high-quality white chocolate
  • Sprinkles (optional)

Instructions

  1. Prepare Pan: Line a 9×13-inch pan with foil and lightly grease it with cooking spray to prevent sticking.
  2. Melt Butter and Marshmallows: In a large pot over low heat, melt the butter. Add 12 cups of mini marshmallows and stir until fully melted and smooth.
  3. Add Cereal and Remaining Marshmallows: Remove the pot from heat, stir in the salt and Rice Krispies cereal until evenly coated. Then add the remaining 4 cups of marshmallows and mix thoroughly to combine.
  4. Press Mixture into Pan: Transfer the mixture to the prepared pan. Using parchment paper lightly sprayed with non-stick spray, press the mixture evenly into the pan and smooth the surface. Allow it to cool completely to set.
  5. Cut into Squares: Once cooled, remove from the pan and cut into 20-24 even squares for serving.
  6. Set Up Double Boiler for Chocolate: Fill two pots with about 1 inch of water and bring to a simmer. Place a heat-safe bowl over each pot to create two double boilers. Melt the dark chocolate in one bowl and the white chocolate in the other, stirring frequently until smooth.
  7. Dip Rice Krispie Treats in Chocolate: Dip each Rice Krispie square halfway into the melted chocolate, allowing the excess to drip off. Insert a popsicle stick into each treat and optionally sprinkle with festive decorations like sprinkles for added color and texture.
  8. Let Chocolate Set: Allow the chocolate coating to fully set at room temperature before serving to ensure the coating is firm and the treats hold together well.

Notes

  • Use high-quality chocolate for the best flavor and smooth coating.
  • Sprinkles are optional but add a festive touch perfect for Easter celebrations.
  • Store treats in an airtight container at room temperature to keep them fresh for up to 3 days.
  • For quicker chocolate setting, refrigerate the dipped treats but be aware this may affect the texture slightly.
  • Be careful not to overheat the marshmallows to avoid burning or grainy texture.
