  • 1½ cups heavy whipping cream
  • 8 oz cream cheese, softened
  • 1 cup powdered sugar
  • ½ teaspoon peppermint extract
  • 6 oz semi-sweet chocolate chips
  • 2 tablespoons milk
  • Green food coloring (optional)

For Garnish:

  • Chocolate shavings or whipped cream (optional)

Instructions

  1. Melt Chocolate: In a small saucepan or microwave-safe bowl, melt the chocolate chips with milk until smooth. Set aside to cool slightly.
  2. Prepare Filling: In a large mixing bowl, beat the cream cheese until smooth. Add the powdered sugar and peppermint extract, beat until combined. Add green food coloring if desired.
  3. Whip Cream: In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold into the cream cheese mixture until light and fluffy.
  4. Layer Pie: Pour half of the filling into the prepared crust. Drizzle half of the melted chocolate over the filling, then gently swirl with a knife. Repeat with the remaining filling and chocolate.
  5. Chill and Garnish: Smooth the top, garnish with chocolate shavings or whipped cream if desired. Chill for at least 4 hours or until set.

Notes

  • Adjust the amount of peppermint extract to taste.
  • For a darker chocolate layer, use bittersweet chips.
