- 1½ cups heavy whipping cream
- 8 oz cream cheese, softened
- 1 cup powdered sugar
- ½ teaspoon peppermint extract
- 6 oz semi-sweet chocolate chips
- 2 tablespoons milk
- Green food coloring (optional)
For Garnish:
- Chocolate shavings or whipped cream (optional)
Instructions
- Melt Chocolate: In a small saucepan or microwave-safe bowl, melt the chocolate chips with milk until smooth. Set aside to cool slightly.
- Prepare Filling: In a large mixing bowl, beat the cream cheese until smooth. Add the powdered sugar and peppermint extract, beat until combined. Add green food coloring if desired.
- Whip Cream: In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold into the cream cheese mixture until light and fluffy.
- Layer Pie: Pour half of the filling into the prepared crust. Drizzle half of the melted chocolate over the filling, then gently swirl with a knife. Repeat with the remaining filling and chocolate.
- Chill and Garnish: Smooth the top, garnish with chocolate shavings or whipped cream if desired. Chill for at least 4 hours or until set.
Notes
- Adjust the amount of peppermint extract to taste.
- For a darker chocolate layer, use bittersweet chips.
- This pie can be made a day ahead and stored in the refrigerator.
