Main Batter:
- 1 cup all-purpose flour
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 3/4 cup granulated sugar
- 2 tablespoons unsweetened cocoa powder
- 1/2 cup milk
- 1/3 cup unsalted butter, melted
- 1 teaspoon vanilla extract
- 1/2 cup chopped pecans
For the Topping:
- 3/4 cup brown sugar
- 1/4 cup unsweetened cocoa powder
- 1 1/2 cups hot water
Instructions
- Preheat oven to 350°F. Lightly grease an 8×8-inch baking dish.
- In a medium bowl, mix flour, baking powder, salt, sugar, and cocoa powder. Stir in milk, melted butter, and vanilla until combined. Fold in chopped pecans.
- Spread the batter evenly into the prepared baking dish.
- In a separate bowl, mix brown sugar and cocoa powder. Sprinkle the mixture evenly over the batter (do not stir).
- Carefully pour hot water over the entire dish. Do not mix.
- Bake for 35–40 minutes, or until the top looks set and slightly firm. The bottom will remain molten and saucy.
- Let cool for 10 minutes before serving. Serve warm with vanilla ice cream if desired.
Notes
- The cobbler creates its own rich chocolate sauce as it bakes.
- You can use walnuts instead of pecans or add a pinch of cinnamon for a twist.
