Description

  • 1 cup unsalted butter (softened)
  • 1/2 cup powdered sugar
  • 1/2 teaspoon almond extract
  • 2 cups all-purpose flour
  • 1/4 teaspoon salt
  • 3/4 cup chopped red and green candied cherries
  • 2 tablespoons granulated sugar (for sprinkling)

Instructions

  1. Preheat oven to 325°F. In a large mixing bowl, cream the softened butter and powdered sugar until light and fluffy.
  2. Mix in the almond extract. Add the flour and salt, and mix until just combined.
  3. Gently fold in the chopped candied cherries until evenly distributed.
  4. Scoop tablespoon-sized portions of dough and roll into balls. Place on a parchment-lined baking sheet and flatten slightly with the bottom of a glass or your palm.
  5. Sprinkle the tops with granulated sugar. Bake for 12–15 minutes, or until the edges are just beginning to turn golden.
  6. Let cool on the pan for 5 minutes before transferring to a wire rack to cool completely.
