Churros Poppers:
- 1 cup water
- 1/4 cup unsalted butter
- 2 tablespoons granulated sugar
- 1/4 teaspoon salt
- 1 cup all-purpose flour
- 2 large eggs
- 1/2 teaspoon vanilla extract
- Vegetable oil for frying
Cinnamon Sugar Coating:
- 1/2 cup granulated sugar
- 1 tablespoon ground cinnamon
Instructions
- In a medium saucepan, combine water, butter, sugar, and salt over medium heat. Bring to a boil, then reduce heat to low and stir in the flour all at once. Stir vigorously until the mixture forms a smooth ball and pulls away from the sides of the pan. Remove from heat and let cool for 5 minutes.
- Beat in the eggs one at a time, mixing well after each addition, then stir in vanilla extract. Transfer the dough to a piping bag fitted with a large round or star tip.
- Heat 2–3 inches of oil in a deep pan to 350°F (175°C). Pipe 1-inch lengths of dough directly into the hot oil, cutting with scissors as you go. Fry in batches, turning occasionally, for 2–3 minutes or until golden brown and puffed. Remove with a slotted spoon and drain on paper towels.
- Immediately toss warm churro poppers in the cinnamon sugar mixture to coat. Serve fresh and warm.
Notes
- For extra flavor, serve with chocolate or caramel dipping sauce.
- You can also bake or air fry them, but they’ll be less crispy than the fried version.
