Main Slaw Ingredients:

  • 4 cups shredded green cabbage
  • 1 cup shredded purple cabbage
  • 1 cup shredded carrots
  • 1/2 cup chopped fresh cilantro
  • 2 green onions sliced

Dressing:

  • 1/4 cup mayonnaise
  • 2 tablespoons plain Greek yogurt (optional)
  • zest and juice of 2 limes
  • 1 tablespoon honey
  • 1 tablespoon apple cider vinegar
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Prepare the Slaw: In a large bowl, combine shredded green cabbage, purple cabbage, carrots, cilantro, and green onions.
  2. Make the Dressing: In a small bowl, whisk together mayonnaise, Greek yogurt, lime zest and juice, honey, apple cider vinegar, garlic powder, salt, and black pepper until smooth.
  3. Combine: Pour the dressing over the slaw and toss well until coated.
  4. Chill: Cover and refrigerate for at least 20 minutes to let flavors meld.
