For the Casserole:
- 1 lb ground beef or ground turkey
- 1 packet taco seasoning
- 1/2 cup water
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup corn kernels (fresh, frozen, or canned)
- 1 can (10 oz) diced tomatoes with green chilies
- 2 cups cooked rice
- 1 cup salsa
- 2 cups shredded cheddar or Mexican blend cheese
- 1/4 cup sliced black olives (optional)
- Chopped fresh cilantro for garnish
Instructions
- Preheat Oven: Preheat oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
- Cook Ground Meat: In a large skillet over medium heat, cook the ground beef until browned, about 5–6 minutes. Drain excess fat.
- Add Seasoning: Add taco seasoning and water; stir to combine and simmer for 2 minutes.
- Combine Ingredients: Stir in black beans, corn, diced tomatoes with green chilies, cooked rice, and salsa. Mix well and pour into the prepared baking dish.
- Add Cheese: Top with shredded cheese and black olives if using.
- Bake: Bake for 20–25 minutes, or until the cheese is melted and bubbly.
- Garnish and Serve: Garnish with fresh cilantro before serving.

- Serve with sour cream, guacamole, or tortilla chips for a complete fiesta-style meal.
