For the Casserole:

  • 1 lb ground beef or ground turkey
  • 1 packet taco seasoning
  • 1/2 cup water
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn kernels (fresh, frozen, or canned)
  • 1 can (10 oz) diced tomatoes with green chilies
  • 2 cups cooked rice
  • 1 cup salsa
  • 2 cups shredded cheddar or Mexican blend cheese
  • 1/4 cup sliced black olives (optional)
  • Chopped fresh cilantro for garnish

Instructions

  1. Preheat Oven: Preheat oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
  2. Cook Ground Meat: In a large skillet over medium heat, cook the ground beef until browned, about 5–6 minutes. Drain excess fat.
  3. Add Seasoning: Add taco seasoning and water; stir to combine and simmer for 2 minutes.
  4. Combine Ingredients: Stir in black beans, corn, diced tomatoes with green chilies, cooked rice, and salsa. Mix well and pour into the prepared baking dish.
  5. Add Cheese: Top with shredded cheese and black olives if using.
  6. Bake: Bake for 20–25 minutes, or until the cheese is melted and bubbly.
  7. Garnish and Serve: Garnish with fresh cilantro before serving.
