Instructions

  1. Preheat Oven: Preheat your oven to 180°C (350°F) standard or 160°C (320°F) fan-forced. Grease and line an 8-inch round cake pan with baking or parchment paper to prevent sticking.
  2. Mix Dry Ingredients: In a large mixing bowl, combine the plain flour, baking powder, baking soda, salt, and 150 grams sugar. Add the peeled and roughly chopped apple pieces, mixing briefly to distribute them evenly.
  3. Mix Wet Ingredients: In a separate bowl, whisk together the eggs, vanilla extract, vegetable oil, and Greek yogurt until smooth and well combined.
  4. Combine Wet and Dry: Gently fold the wet ingredients into the dry mixture just until combined. Avoid overmixing to keep the cake tender. Spoon the batter evenly into the prepared cake pan.
  5. Make Cinnamon Topping: In a small bowl, mix 50 grams sugar, ground cinnamon, and melted butter until the mixture becomes lumpy. Sprinkle this cinnamon topping evenly over the cake batter in the pan.
