Ingredients
Scale
Blondie Batter
- ½ cup unsalted butter, melted and cooled slightly
- 1 cup packed light brown sugar
- 1 large egg + 1 large egg yolk, at room temperature
- 1 tablespoon vanilla extract
- 1 cup all-purpose flour
- ¼ teaspoon baking powder
- ½ teaspoon salt
Cinnamon Sugar Swirl
- 1 tablespoon cinnamon
- ¼ cup white sugar
Cream Cheese Glaze
- 1 tablespoon cream cheese
- 1 tablespoon heavy cream
- ¾ cup powdered sugar
- 1 teaspoon vanilla extract
- Pinch of salt
Instructions
- Preheat and Prepare Pan: Preheat your oven to 350°F (175°C). Line an 8 x 8-inch baking pan with parchment paper to prevent sticking and set it aside.
- Mix Wet Ingredients: In a large mixing bowl, whisk together the melted butter and light brown sugar until smooth. Add the egg, egg yolk, and vanilla extract, mixing well to combine.
- Combine Dry Ingredients: In a separate bowl, stir together the all-purpose flour, baking powder, and salt. Gradually fold the dry ingredients into the wet ingredients until just combined, ensuring there are no clumps of flour, but be careful not to overmix.
- Layer the Batter and Cinnamon Sugar: Pour the blondie batter evenly into the prepared baking pan. In a small bowl, combine the white sugar and cinnamon to make the cinnamon sugar. Drop large spoonfuls of this cinnamon sugar mixture on top of the batter. Use a butter knife to gently swirl the cinnamon sugar into the batter creating a marbled effect.
- Bake the Blondies: Place the pan in the preheated oven and bake for 30 to 40 minutes. The blondies should be golden brown and set around the edges and puffed up. The center will still be slightly doughy but will set as it cools.
- Prepare the Cream Cheese Glaze: While the blondies cool, make the glaze by combining the cream cheese, heavy cream, powdered sugar, vanilla extract, and a pinch of salt in a small saucepan over medium-low heat. Whisk constantly until fully melted and smooth, then remove from heat and allow to cool slightly.
- Finish and Serve: Once the blondies have cooled, drizzle the cream cheese glaze generously over the top. Cut into 9 squares and serve. Enjoy the gooey, cinnamon-swirled blondies!
Notes
- Ensure the butter is melted and slightly cooled before mixing to prevent cooking the eggs.
- Do not overmix the batter to keep the blondies tender.
- The center of the blondies may appear doughy when done baking, this is expected and will firm up as they cool.
- Use parchment paper for easy removal and clean-up.
- You can store leftover blondies in an airtight container at room temperature for up to 3 days or refrigerate for up to a week.
