Boiling and Finishing:

  • 1 tablespoon brown sugar (for boiling water)
  • 1 egg white (for egg wash)
  • 1/4 cup cinnamon sugar mixture (2 tablespoons granulated sugar + 1/2 teaspoon cinnamon)

Instructions

  1. Dissolve the Yeast: In a large bowl, dissolve the yeast and granulated sugar in warm water. Let sit for 5–10 minutes until foamy.
  2. Mix the Dough: Stir in bread flour, salt, and ground cinnamon. Knead on a lightly floured surface until smooth and elastic.
  3. Rise the Dough: Place the dough in a greased bowl, cover, and let rise for 1 hour until doubled in size.
  4. Shape the Bagels: Divide dough, shape into bagels, and let rest for 10 minutes.
  5. Boil and Bake: Boil bagels, brush with egg white, sprinkle with cinnamon sugar, and bake until golden brown.
  6. Cool and Serve: Cool on a wire rack before serving.
