Instructions
- Preheat oven and prepare pan: Preheat oven to 350°F (175°C) and grease a 9-inch round cake pan or line with parchment paper.
- Mix dry ingredients: In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
- Combine wet ingredients: In a large bowl, whisk sugar and eggs until pale. Slowly whisk in olive oil, then stir in yogurt, juices, zests, and vanilla.
- Combine wet and dry ingredients: Add the dry ingredients to the wet ingredients and mix until just combined.
- Bake: Pour the batter into the prepared pan and bake for 35–40 minutes until a toothpick comes out clean.
- Cool and serve: Cool in the pan for 10 minutes, then transfer to a wire rack. Dust with powdered sugar before serving if desired.
