Main Dish:

  • 4 tablespoons unsalted butter
  • 1 small onion, chopped
  • 1/2 cup sliced mushrooms
  • 1/4 cup all-purpose flour
  • 1 1/2 cups chicken broth
  • 1 cup whole milk
  • 1/2 cup heavy cream
  • 2 cups cooked chicken, shredded or diced
  • 1/2 cup frozen peas
  • 1/4 cup diced pimientos, drained
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon paprika

Garnish:

  • Chopped parsley for garnish (optional)

Instructions

  1. In a large skillet over medium heat, melt the butter. Add the chopped onion and cook for 2–3 minutes until soft.
  2. Add the mushrooms and cook for another 4–5 minutes until tender and lightly browned.
  3. Sprinkle in the flour and cook, stirring constantly, for 1–2 minutes to eliminate the raw flour taste.
  4. Slowly whisk in the chicken broth, followed by the milk and cream, whisking until smooth.
  5. Bring to a gentle simmer and cook for 3–4 minutes until thickened.
  6. Stir in the cooked chicken, peas, pimientos, salt, pepper, garlic powder, and paprika.
  7. Simmer for 5 more minutes, or until everything is heated through.
  8. Serve hot over puff pastry shells, toast, biscuits, or rice.
  9. Garnish with parsley if desired.

Notes

  • Rotisserie chicken works well for this recipe.
  • You can also add diced bell peppers for extra flavor and color.
  • Leftovers reheat well the next day.
