Ingredients
Tart Crust:
1 9-inch sweet tart crust (pâte sucrée), baked and cooled;
Pastry Cream:
1 1/2 cups whole milk; 1/2 cup granulated sugar; 4 large egg yolks; 3 tablespoons cornstarch; 2 tablespoons unsalted butter; 1 teaspoon vanilla extract;
Assembly:
2 cups mixed fresh fruit (such as strawberries, kiwi, blueberries, raspberries, and peaches); 1/4 cup apricot jam; 1 tablespoon water
Instructions
- Prepare Pastry Cream: Heat milk in a saucepan. Whisk sugar, egg yolks, cornstarch. Combine with hot milk, cook until thickened. Remove from heat, add butter, vanilla. Chill.
- Assemble Tart: Spread pastry cream in tart shell. Arrange fresh fruit on top.
- Glaze: Heat apricot jam with water, brush over fruit.
- Chill: Refrigerate before serving.
