- 1/2 cup granulated sugar
- 2 cups all-purpose flour
- 1/4 teaspoon salt
For the filling:
- 1 1/2 cups granulated sugar
- 1/4 cup all-purpose flour
- 4 large eggs
- 2/3 cup freshly squeezed lemon juice (about 3–4 lemons)
- 1 tablespoon lemon zest (optional)
- powdered sugar for dusting (optional)
Instructions
- Preheat oven and prepare the pan: Preheat oven to 350°F and grease or line a 9×13-inch baking dish with parchment paper.
- Make the crust: Cream together butter and sugar, mix in flour and salt, then press into the pan and bake until golden.
- Prepare the filling: Whisk together sugar and flour, add eggs, lemon juice, and zest, then pour over the hot crust.
- Bake and chill: Bake until set, cool, refrigerate, and dust with powdered sugar before serving.
Notes
- For extra tang, add more lemon zest.
- Use a glass or ceramic pan for even baking and clean lemon flavor.
