  • 1 pound ground beef (80/20)
  • 1 teaspoon salt
  • ½ teaspoon black pepper

For the Sandwich:

  • 1 large yellow onion (thinly sliced)
  • 2 tablespoons unsalted butter (plus more for grilling)
  • 8 slices rye bread
  • 8 slices Swiss cheese
  • Optional Thousand Island or burger sauce for serving

Instructions

  1. Prepare the Patties: Shape the ground beef into 4 thin oval patties slightly larger than your bread slices. Season both sides with salt and pepper.
  2. Caramelize the Onions: In a skillet, melt 1 tablespoon of butter and cook the sliced onions until soft and golden brown, about 15–20 minutes. Remove from pan and set aside.
  3. Cook the Patties: In the same skillet, cook the beef patties over medium-high heat for 3–4 minutes per side until browned and cooked through. Remove and set aside.
  4. Assemble the Sandwiches: Butter one side of each slice of rye bread. Layer Swiss cheese, cooked patty, caramelized onions, more Swiss cheese, and top with another slice of bread (buttered side out).
  5. Grill the Sandwiches: Grill in a skillet over medium heat until golden brown and cheese is melted, about 3–4 minutes per side.
