  • 3 large eggs
  • 1 cup granulated sugar
  • 2/3 cup canned pumpkin puree
  • 1 teaspoon vanilla extract
  • Powdered sugar for dusting
  • Filling:

  • 8 ounces cream cheese, softened
  • 4 tablespoons unsalted butter, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the Oven: Preheat the oven to 375°F (190°C). Line and grease a 10×15-inch jelly roll pan.
  2. Prepare the Cake: Mix dry ingredients. Beat eggs and sugar. Add pumpkin and vanilla. Fold in dry ingredients. Bake for 12-14 minutes.
  3. Roll the Cake: Dust a towel with powdered sugar. Invert and roll the cake with the towel. Let cool.
  4. Make the Filling: Beat cream cheese, butter, sugar, and vanilla. Spread over cooled cake. Roll without the towel.
  5. Chill and Serve: Refrigerate for at least 1 hour. Dust with powdered sugar before slicing.
