For the Steaks

  • 1 cup mushrooms, finely chopped
  • 1 large onion, chopped and divided (1/4 cup finely chopped for steaks, rest for gravy)
  • 1 1/2 pounds ground beef
  • 1 egg
  • 1/3 cup panko breadcrumbs
  • 2 tablespoons tomato paste
  • 2 tablespoons whole grain mustard
  • 1 teaspoon minced garlic
  • 1 tablespoon Worcestershire sauce
  • 1/4 teaspoon liquid smoke (optional)
  • 1 1/4 teaspoons kosher salt
  • 3/4 teaspoon black pepper
  • 1 teaspoon onion powder
  • 1 tablespoon oil, for frying

For the Gravy

  • 1 tablespoon butter
  • 2 1/2 cups sliced mushrooms
  • 3/4 cup chopped onion (remaining after steaks)
  • 1 teaspoon minced garlic
  • 2 1/2 cups beef broth
  • 2 1/2 tablespoons flour
  • 1 teaspoon whole grain mustard
  • 1 tablespoon Worcestershire sauce
  • Parsley, to garnish

  • Creamy mashed potatoes

Instructions

  1. Prepare the Ingredients: Chop the onion and mushrooms. Set aside 1/4 cup of the onion finely chopped to use in the steak mixture, and finely chop the rest for the gravy.
  2. Make the Steaks: In a large bowl, combine the 1/4 cup finely chopped onion, 1 cup chopped mushrooms, ground beef, egg, breadcrumbs, tomato paste, 2 tablespoons whole grain mustard, 1 teaspoon garlic, 1 tablespoon Worcestershire sauce, liquid smoke if using, salt, pepper, and onion powder. Mix thoroughly until all ingredients are well incorporated.
  3. Shape the Patties: Divide the mixture and shape into 6 oval patties, making them uniform for even cooking.
  4. Cook the Steaks: Heat 1 tablespoon oil in a large skillet over medium-high heat. Add the patties and cook for about 2 minutes on each side, or until browned. Remove and set aside on a plate.
  5. Prepare the Gravy: In the same skillet, melt 1 tablespoon butter and sauté 2 1/2 cups sliced mushrooms and the reserved chopped onions for about 5 minutes until softened. Add 1 teaspoon minced garlic and sauté for another minute to release the flavor.
  6. Make the Gravy Sauce: In a small bowl, whisk together 2 1/2 cups beef broth and 2 1/2 tablespoons flour until smooth. Slowly pour this mixture into the skillet while whisking continuously to prevent lumps. Add 1 teaspoon whole grain mustard and 1 tablespoon Worcestershire sauce. Continue cooking and stirring for about 2 minutes until the gravy begins to thicken and simmer.
  7. Finish Cooking the Steaks: Return the browned patties to the skillet with the gravy. Reduce heat to medium-low and simmer the steaks for 5 minutes, or until they are cooked through and the gravy has thickened nicely around them.
  8. Serve: Sprinkle freshly chopped parsley over the steaks and gravy. Serve hot alongside creamy mashed potatoes for a hearty, comforting meal.

Notes

  • Liquid smoke is optional but adds a nice smoky flavor to the patties if desired.
  • Panko breadcrumbs help achieve a tender texture; however, regular breadcrumbs can be used as a substitute.
  • You can adjust the consistency of the gravy by adding more beef broth if it becomes too thick.
