  • 1 tablespoon olive oil
  • 1 small onion (chopped)
  • 2 garlic cloves (minced)
  • 1 tablespoon tomato paste
  • 1 (28 oz) can whole peeled tomatoes
  • 2 cups low-sodium vegetable broth
  • 1 teaspoon sugar
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon dried basil
  • ½ cup plain Greek yogurt or light cream
  • fresh basil or parsley (for garnish, optional)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add chopped onion and cook until soft. Stir in garlic and tomato paste, cook until fragrant.
  2. Add canned tomatoes, broth, sugar, salt, pepper, basil. Simmer for 15–20 minutes, breaking up tomatoes.
  3. Blend soup until smooth, return to heat. Stir in yogurt or cream until creamy.
  4. Adjust seasoning, serve warm with herbs and yogurt or cream.
