Description

Coconut Crème Chocolates are creamy, bite-sized treats that blend the tropical flavors of shredded coconut with rich chocolate. These no-bake chocolates feature a luscious coconut cream center coated in smooth melted semi-sweet or dark chocolate, perfect for an easy homemade dessert or gift.

Ingredients

Scale

Coconut Filling

  • 1 cup sweetened shredded coconut
  • ¼ cup sweetened condensed milk
  • 2 tablespoons coconut cream or full-fat coconut milk (thick part only)
  • ½ teaspoon vanilla extract
  • Pinch of salt

Chocolate Coating

  • 8 ounces semi-sweet or dark chocolate, chopped (or chocolate chips)
  • 1 teaspoon coconut oil (optional, for smoother melting)

Instructions

  1. Prepare the Coconut Mixture: In a medium bowl, combine the shredded coconut, sweetened condensed milk, coconut cream, vanilla extract, and a pinch of salt. Mix thoroughly until the ingredients are well incorporated to form a sticky, consistent mixture.
  2. Chill the Mixture: Cover the bowl and refrigerate the coconut mixture for 20 to 30 minutes. This helps it firm up, making it easier to handle in the next step.
  3. Shape the Coconut Centers: Once chilled, scoop the mixture and roll into small balls or press into small rectangles using your hands. Arrange these shapes on a tray lined with parchment paper and place the tray in the freezer for 15 to 20 minutes to set firmly.
  4. Melt the Chocolate: While the coconut centers chill, melt the chopped chocolate along with the optional coconut oil in a microwave-safe bowl. Heat in 30-second intervals, stirring between each until the mixture is smooth and fully melted.
  5. Coat the Coconut Shapes: Using a fork, dip each chilled coconut piece into the melted chocolate, allowing excess chocolate to drip off. Place the coated chocolates back onto the parchment-lined tray.
  6. Set the Chocolates: Let the dipped chocolates set at room temperature or refrigerate until the chocolate coating firms up completely.

Notes

  • For added decoration, drizzle extra melted chocolate on top or sprinkle with shredded coconut before the chocolate coating sets.
  • Store the chocolates in an airtight container in the refrigerator for up to one week to maintain freshness.
  • These chocolates make charming homemade gifts for holidays or special occasions.
