  • 2 cloves garlic (minced)

  • 2 tablespoons red curry paste
  • 1 can (13.5 oz) full-fat coconut milk
  • 3 cups vegetable broth
  • 1 tablespoon soy sauce
  • 1 tablespoon lime juice
  • 1 teaspoon brown sugar
  • 1 cup mushrooms (sliced)
  • 1 cup baby spinach or kale
  • 1/2 cup shredded carrots
  • Salt to taste
  • Fresh cilantro and lime wedges for garnish

For the Dumplings:

  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup coconut milk (plus more if needed)
  • 1 tablespoon chopped fresh cilantro

Instructions

  1. Main Soup: Heat coconut oil in a large pot over medium heat. Sauté the onion until softened, about 3–4 minutes. Add the garlic and ginger, cook for 1 more minute. Stir in red curry paste, cook for another minute. Add coconut milk, vegetable broth, soy sauce, lime juice, and brown sugar. Simmer gently. Add mushrooms, carrots, and greens. Simmer 5–7 minutes until tender.
  2. For the Dumplings: Combine flour, baking powder, and salt in a bowl. Stir in coconut milk and cilantro until just combined. Add more coconut milk if needed. Drop spoonfuls of dough into the simmering soup. Cover and cook for 12–15 minutes until dumplings are puffed and cooked through.
  3. Season soup with salt. Serve hot with cilantro and lime wedges.
