Wet Ingredients:
- 1/2 cup unsalted butter, melted and slightly cooled
- 1 cup buttermilk, room temperature
- 2 large eggs, room temperature
- 1 teaspoon vanilla extract
For the streusel topping:
- 1/3 cup all-purpose flour
- 1/3 cup brown sugar
- 1 teaspoon ground cinnamon
- 3 tablespoons unsalted butter, cold and cubed
Instructions
- Preheat the Oven: Preheat the oven to 375°F (190°C) and line a 12-cup muffin tin with paper liners.
- Prepare the Batter: In a medium bowl, mix the dry ingredients. In another bowl, combine the wet ingredients and then fold them into the dry ingredients. Divide the batter into the muffin cups.
- Make the Streusel Topping: Combine the flour, brown sugar, and cinnamon. Cut in the butter until crumbly. Sprinkle over the muffin batter.
- Bake: Bake for 18 to 20 minutes until a toothpick comes out clean. Cool before serving.
