Description

Colcannon is a traditional Irish dish that combines creamy mashed potatoes with sautéed cabbage and green onions. This comforting side dish is perfect for St. Patrick’s Day or any cozy meal.

Potato Mixture:

  • 2 pounds potatoes, peeled and cut into chunks
  • 4 tablespoons unsalted butter, divided
  • 1/2 cup whole milk or cream
  • Salt and black pepper, to taste

Cabbage Mixture:

  • 3 cups green cabbage, finely shredded
  • 4 green onions, chopped
  • 2 tablespoons unsalted butter

Instructions

  1. Cook Potatoes: Place potatoes in a large pot, cover with cold water, add salt, and boil until tender, about 15-20 minutes.
  2. Sauté Cabbage: In a skillet, melt 2 tablespoons of butter, cook cabbage until softened, then add green onions and cook briefly.
  3. Mash Potatoes: Drain cooked potatoes, return to pot, add remaining butter and milk/cream, mash until smooth.
  4. Combine: Fold in sautéed cabbage mixture, season with salt and pepper.
  5. Serve: Serve warm, optionally topped with extra butter.
