Description
Colcannon is a traditional Irish dish that combines creamy mashed potatoes with sautéed cabbage and green onions. This comforting side dish is perfect for St. Patrick’s Day or any cozy meal.

Potato Mixture:
- 2 pounds potatoes, peeled and cut into chunks
- 4 tablespoons unsalted butter, divided
- 1/2 cup whole milk or cream
- Salt and black pepper, to taste
Cabbage Mixture:
- 3 cups green cabbage, finely shredded
- 4 green onions, chopped
- 2 tablespoons unsalted butter
Instructions
- Cook Potatoes: Place potatoes in a large pot, cover with cold water, add salt, and boil until tender, about 15-20 minutes.
- Sauté Cabbage: In a skillet, melt 2 tablespoons of butter, cook cabbage until softened, then add green onions and cook briefly.
- Mash Potatoes: Drain cooked potatoes, return to pot, add remaining butter and milk/cream, mash until smooth.
- Combine: Fold in sautéed cabbage mixture, season with salt and pepper.
- Serve: Serve warm, optionally topped with extra butter.
