Noodles:
- 8 oz spaghetti, soba, or rice noodles
Peanut Sauce:
- 3 tablespoons creamy peanut butter
- 1 tablespoon sesame oil
- 2 tablespoons soy sauce
- 1 tablespoon rice vinegar
- 1 tablespoon honey or maple syrup
- 1 teaspoon grated fresh ginger
- 1 clove garlic, minced
- 1–2 teaspoons sriracha or chili paste (optional)
- ¼ cup warm water (as needed for thinning)
Additional:
- 1 cup shredded carrots
- 1 cup thinly sliced cucumber
- 2 green onions, sliced
- 1 tablespoon toasted sesame seeds
- ¼ cup chopped cilantro (optional)
Instructions
- Cook the noodles: Cook the noodles according to package directions. Drain and rinse under cold water, then toss with sesame oil.
- Prepare the sauce: In a bowl, whisk together peanut butter, sesame oil, soy sauce, rice vinegar, honey, ginger, garlic, and sriracha. Thin with warm water.
- Toss noodles: Coat the noodles with the sauce. Add carrots, cucumber, and green onions. Toss to combine.
- Serve: Chill and serve topped with sesame seeds and cilantro.

- Add shredded chicken, tofu, or edamame for extra protein.
- For a nut-free version, use sunflower seed butter.
