Peanut Sauce:

  • 3 tablespoons creamy peanut butter
  • 1 tablespoon sesame oil
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon grated fresh ginger
  • 1 clove garlic, minced
  • 12 teaspoons sriracha or chili paste (optional)
  • ¼ cup warm water (as needed for thinning)

Additional:

  • 1 cup shredded carrots
  • 1 cup thinly sliced cucumber
  • 2 green onions, sliced
  • 1 tablespoon toasted sesame seeds
  • ¼ cup chopped cilantro (optional)

Instructions

  1. Cook the noodles: Cook the noodles according to package directions. Drain and rinse under cold water, then toss with sesame oil.
  2. Prepare the sauce: In a bowl, whisk together peanut butter, sesame oil, soy sauce, rice vinegar, honey, ginger, garlic, and sriracha. Thin with warm water.
