  • ½ cup honey or maple syrup
  • ¼ cup coconut oil
  • ½ teaspoon vanilla extract
  • 2 scoops unflavored collagen peptides
  • ½ cup vanilla or chocolate protein powder
  • 1½ cups crispy rice cereal
  • ¼ cup chopped peanuts

For the Chocolate Topping:

  • 1 cup dark chocolate chips
  • 1 tablespoon coconut oil

Instructions

  1. Prepare the Bar Mixture: Line an 8×8-inch baking pan with parchment paper. Melt peanut butter, honey (or maple syrup), and coconut oil in a saucepan over low heat. Stir until smooth. Remove from heat, add vanilla, collagen peptides, and protein powder. Mix well. Fold in crispy rice cereal and chopped peanuts. Press the mixture into the pan.
  2. Make the Chocolate Topping: In a microwave-safe bowl, melt chocolate chips and coconut oil in 30-second intervals until smooth. Pour over the peanut mixture and spread evenly.
  3. Chill and Serve: Refrigerate for 1–2 hours until firm. Slice into bars and store in the fridge.
