Description

This creamy and flavorful Corn Dip is the perfect party appetizer or snack. Packed with corn, cheese, and spices, it’s a crowd-pleaser that can be served cold or hot.

  • 3 cups corn kernels (fresh, canned, or frozen and thawed)
  • 1 cup sour cream
  • 1/2 cup mayonnaise
  • 2 cups shredded cheddar cheese
  • 1 can (4 ounces) diced green chilies

Additional Ingredients:

  • 1/2 cup diced red bell pepper
  • 1/4 cup chopped green onions
  • 1 teaspoon garlic powder
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • Salt and black pepper to taste
  • 1/4 cup fresh cilantro, chopped
  • Tortilla chips for serving

Instructions

  1. In a large mixing bowl, combine sour cream, mayonnaise, cheddar cheese, green chilies, bell pepper, green onions, garlic powder, chili powder, cumin, salt, and pepper.
  2. Stir in the corn and mix until evenly coated.

  3. Transfer to a serving dish and sprinkle with cilantro.
  4. Chill for at least 1 hour before serving to let the flavors blend.

  5. Serve cold with tortilla chips.

Notes

  • For a hot version, transfer the mixture to a baking dish, top with extra cheese, and bake at 375°F for 20 minutes until bubbly.
