Main Ingredients:
- 3 cups corn kernels (fresh, canned, or frozen and thawed)
- 1 cup sour cream
- 1/2 cup mayonnaise
- 2 cups shredded cheddar cheese
- 1 can (4 ounces) diced green chilies
Additional Ingredients:
- 1/2 cup diced red bell pepper
- 1/4 cup chopped green onions
- 1 teaspoon garlic powder
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- Salt and black pepper to taste
- 1/4 cup fresh cilantro, chopped
- Tortilla chips for serving
Instructions
- In a large mixing bowl, combine sour cream, mayonnaise, cheddar cheese, green chilies, bell pepper, green onions, garlic powder, chili powder, cumin, salt, and pepper.
- Transfer to a serving dish and sprinkle with cilantro.
- Serve cold with tortilla chips.
Stir in the corn and mix until evenly coated.
Chill for at least 1 hour before serving to let the flavors blend.
Notes
- For a hot version, transfer the mixture to a baking dish, top with extra cheese, and bake at 375°F for 20 minutes until bubbly.
- You can also substitute Greek yogurt for a lighter dip.
