Description

Delicious and crispy corn fritters that are perfect as an appetizer or snack. These fritters are packed with fresh corn, green onions, and cheddar cheese, making them a flavorful treat for any occasion.

Ingredients

Scale

Dry Ingredients:

  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Wet Ingredients:

  • 2 large eggs, lightly beaten
  • 1/4 cup milk

Additional Ingredients:

  • 2 cups fresh or canned corn kernels (drained if canned)
  • 1/4 cup chopped green onions
  • 1/4 cup shredded cheddar cheese (optional)
  • 2 tablespoons chopped fresh parsley
  • Vegetable oil for frying

Instructions

  1. Prepare the Batter: In a large bowl, whisk together the flour, baking powder, salt, and pepper.
  2. Mix Wet Ingredients: In a separate bowl, combine the eggs and milk, then stir into the dry ingredients until just combined.
  3. Combine Ingredients: Fold in the corn, green onions, cheddar cheese (if using), and parsley.
  4. Fry the Fritters: Heat about 1/4 inch of vegetable oil in a large skillet over medium heat. Drop heaping tablespoons of batter into the skillet, flattening slightly with a spatula. Fry for 2 to 3 minutes on each side or until golden brown and cooked through.
  5. Drain and Serve: Transfer the fritters to a paper towel-lined plate to drain. Serve warm with sour cream or your favorite dipping sauce.

Notes

  • You can use frozen corn—just thaw and pat dry first.
  • Add a pinch of cayenne pepper for a bit of heat.
