- 2 cups fresh or canned corn kernels (drained if canned)
- 1/4 cup chopped green onions
- 1/4 cup shredded cheddar cheese (optional)
- 2 tablespoons chopped fresh parsley
- Vegetable oil for frying
Instructions
- Prepare the Batter: In a large bowl, whisk together the flour, baking powder, salt, and pepper.
- Mix Wet Ingredients: In a separate bowl, combine the eggs and milk, then stir into the dry ingredients until just combined.
- Combine Ingredients: Fold in the corn, green onions, cheddar cheese (if using), and parsley.
- Fry the Fritters: Heat about 1/4 inch of vegetable oil in a large skillet over medium heat. Drop heaping tablespoons of batter into the skillet, flattening slightly with a spatula. Fry for 2 to 3 minutes on each side or until golden brown and cooked through.
- Drain and Serve: Transfer the fritters to a paper towel-lined plate to drain. Serve warm with sour cream or your favorite dipping sauce.

- You can use frozen corn—just thaw and pat dry first.
