Corn Ribs:

  • 4 ears of corn, husked and cleaned
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • ½ teaspoon chili powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • fresh chopped parsley or cilantro for garnish (optional)
  • lime wedges for serving

Instructions

  1. Preheat Oven: Preheat oven to 425°F (220°C).
  2. Cut Corn: Cut each ear of corn into 3-4 equal sections lengthwise to create “ribs.”
  3. Toss with Seasonings: In a large bowl, toss the corn ribs with olive oil, smoked paprika, garlic powder, chili powder, salt, and black pepper until evenly coated.
  4. Roast Corn: Arrange the corn ribs on a baking sheet lined with parchment paper in a single layer. Roast in the preheated oven for 20-25 minutes, flipping halfway through, until tender and slightly charred.
  5. Garnish and Serve: Remove from oven, garnish with fresh parsley or cilantro if desired, and serve with lime wedges for squeezing over the top.

  • For extra flavor, sprinkle with grated Parmesan or drizzle with a garlic butter sauce before serving.
