Corn Ribs:
- 4 ears of corn, husked and cleaned
- 2 tablespoons olive oil
- 1 teaspoon smoked paprika
- 1 teaspoon garlic powder
- ½ teaspoon chili powder
- ½ teaspoon salt
- ¼ teaspoon black pepper
- fresh chopped parsley or cilantro for garnish (optional)
- lime wedges for serving
Instructions
- Preheat Oven: Preheat oven to 425°F (220°C).
- Cut Corn: Cut each ear of corn into 3-4 equal sections lengthwise to create “ribs.”
- Toss with Seasonings: In a large bowl, toss the corn ribs with olive oil, smoked paprika, garlic powder, chili powder, salt, and black pepper until evenly coated.
- Roast Corn: Arrange the corn ribs on a baking sheet lined with parchment paper in a single layer. Roast in the preheated oven for 20-25 minutes, flipping halfway through, until tender and slightly charred.
- Garnish and Serve: Remove from oven, garnish with fresh parsley or cilantro if desired, and serve with lime wedges for squeezing over the top.
Notes
- For extra flavor, sprinkle with grated Parmesan or drizzle with a garlic butter sauce before serving.
- Corn ribs can also be grilled instead of roasted for a smoky taste.
