Instructions

  1. Heat the Skillet: Heat butter and olive oil in a large skillet over medium heat.
  2. Sauté Vegetables: Add diced onion and bell pepper, sauté for 4–5 minutes until softened.
  3. Add Beef and Potatoes: Stir in chopped corned beef and cooked potatoes.
  4. Season: Season with garlic powder, paprika, salt, and pepper.
  5. Cook: Press mixture into an even layer, cook undisturbed for 5–6 minutes until crispy.
  6. Repeat: Stir and repeat crisping process 1–2 more times.
  7. Adjust Seasoning: Taste and adjust seasoning if needed.
  8. Garnish and Serve: Garnish with parsley and serve hot, topped with eggs if desired.
