Instructions

  1. Heat the Butter and Olive Oil: In a large skillet, heat the butter and olive oil over medium heat until the butter melts.
  2. Sauté Onion and Pepper: Add the chopped onion and green bell pepper, if using, and sauté for about 5 minutes until softened.
  3. Add Potatoes: Stir in the diced potatoes and cook for another 5 minutes, allowing them to start browning.
  4. Incorporate Corned Beef: Add the diced corned beef and sprinkle in the dried thyme, salt, and black pepper. Press the mixture down with a spatula and let it cook undisturbed for 5 to 7 minutes to develop a crispy crust.
  5. Crisp and Garnish: Flip sections of the hash and cook for another 5 minutes until the hash is browned and crisp all over. Taste and adjust seasoning as needed. Garnish with chopped fresh parsley and serve hot, topped with fried eggs if desired.
