Ingredients

Scale

Main Ingredients

  • 1 lb lean ground beef
  • 2 medium sweet potatoes, peeled and cut into 1/2 inch cubes
  • 2 tbsp olive oil
  • 1 tsp smoked paprika
  • 1 tsp ground cumin
  • 1/2 tsp chili powder
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp kosher salt, plus more to taste
  • 1/4 tsp black pepper
  • 1/4 cup low sodium beef broth or water

Toppings

  • 1 1/2 cups cottage cheese
  • 1 large avocado, sliced
  • 1 to 2 fresh jalapeños, thinly sliced
  • 2 green onions, thinly sliced
  • 1 lime, cut into wedges (optional)

Instructions

  1. Preheat oven: Preheat your oven to 425°F (220°C) and line a large baking sheet with parchment paper to prepare for roasting the sweet potatoes.
  2. Prepare sweet potatoes: Toss the cubed sweet potatoes with olive oil, smoked paprika, cumin, chili powder, garlic powder, onion powder, salt, and pepper until they are evenly coated. Spread them out in a single layer on the baking sheet.
  3. Roast sweet potatoes: Roast the sweet potatoes in the oven for 20 to 25 minutes, tossing once halfway through, until they are caramelized on the edges and tender in the center. Once done, set aside.
  4. Brown ground beef: While the sweet potatoes roast, heat a large skillet over medium-high heat. Add the ground beef and cook, breaking it up with a spatula, until browned and no longer pink.
  5. Season beef: Drain excess fat from the skillet if necessary. Season the beef with smoked paprika, cumin, chili powder, garlic powder, onion powder, salt, and pepper, stirring well to coat all the meat with the spices.
  6. Simmer beef: Pour in the beef broth or water and simmer for 2 to 3 minutes until the liquid reduces slightly and the beef becomes glossy and saucy but not soupy. Remove from heat.
  7. Prepare toppings: Slice the avocado, jalapeños, and green onions. Stir the cottage cheese so that it becomes creamy and ready to scoop.
  8. Assemble bowls: Divide the roasted sweet potatoes evenly among 4 bowls. Top each with a portion of the seasoned ground beef, and add a generous scoop of cottage cheese to the side.
  9. Add garnishes: Fan the avocado slices over each bowl, then sprinkle with the sliced green onions and jalapeños. Finish with a squeeze of fresh lime juice if desired.
  10. Serve: Serve immediately while the beef and potatoes are warm. Alternatively, let components cool and pack separately for meal prep bowls.

Notes

  • You can adjust the spice level by adding more or fewer jalapeños.
  • Use lean ground beef to reduce fat content and keep the bowls healthier.
  • For a dairy-free option, omit the cottage cheese or substitute with a plant-based alternative.
  • These bowls are great for meal prep; store components separately and combine before eating.
  • Lime wedges are optional but add a nice bright acidity that complements the flavors.
