  • 1.5 pounds boneless skinless chicken thighs, cut into bite-sized pieces
  • Salt and black pepper to taste
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 3 medium carrots, sliced
  • 2 celery stalks, sliced
  • 1 pound baby potatoes, halved
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • 3 tablespoons all-purpose flour
  • 4 cups chicken broth
  • 1/2 cup frozen peas
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Heat olive oil and brown chicken: Heat olive oil in a large pot, season chicken with salt and pepper, brown chicken for 5-6 minutes, then set aside.
  2. Cook vegetables: In the same pot, cook onion, garlic, carrots, and celery for 5 minutes.
  3. Add flour and broth: Sprinkle flour over vegetables, stir, then slowly add chicken broth.
