Description

Cowboy Caviar is a colorful and flavorful bean salad that is perfect for parties, potlucks, or as a refreshing side dish. This Tex-Mex inspired dish is packed with protein and fiber, making it a healthy and satisfying option.

Ingredients

Scale

Salad:

  • 1 (15-ounce) can black beans (drained and rinsed)
  • 1 (15-ounce) can black-eyed peas (drained and rinsed)
  • 1 1/2 cups corn (fresh, canned, or thawed frozen)
  • 1 red bell pepper (diced)
  • 1 green bell pepper (diced)
  • 1 small red onion (finely diced)
  • 1 jalapeño (seeded and minced)
  • 1 cup cherry tomatoes (halved)
  • 1/4 cup fresh cilantro (chopped)
  • 1 avocado (diced, optional)

Dressing:

  • 1/3 cup olive oil
  • 1/4 cup red wine vinegar
  • 1 tablespoon lime juice
  • 1 tablespoon honey
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Combine Salad Ingredients: In a large bowl, mix together the black beans, black-eyed peas, corn, bell peppers, onion, jalapeño, tomatoes, cilantro, and avocado.
  2. Prepare Dressing: In a separate bowl, whisk together olive oil, red wine vinegar, lime juice, honey, chili powder, cumin, salt, and pepper.
  3. Toss Salad: Pour the dressing over the salad and gently toss to combine.
  4. Chill: Refrigerate the salad for at least 30 minutes to allow the flavors to meld.
  5. Serve: Enjoy chilled or at room temperature with tortilla chips or as a side salad.

Notes

  • Add the avocado just before serving to keep it fresh.
  • For a spicier version, consider leaving the jalapeño seeds in or adding hot sauce to the dressing.
