Description

This Cowboy Meatloaf & Potato Casserole combines the classic flavors of meatloaf and mashed potatoes into one hearty and comforting dish. A savory ground beef base topped with creamy mashed potatoes, cheese, bacon, and green onions, baked to perfection.

For the meatloaf base:

  • 1 pound ground beef
  • ½ cup plain breadcrumbs
  • 1 egg
  • ½ cup diced onion
  • 2 cloves garlic (minced)
  • 2 tablespoons ketchup
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon salt
  • ½ teaspoon black pepper

For the potato layer:

  • 3 cups mashed potatoes (prepared and seasoned)
  • ½ cup sour cream
  • ½ cup shredded cheddar cheese

For the topping:

  • ½ cup cooked and crumbled bacon
  • ½ cup shredded cheddar cheese
  • 2 tablespoons chopped green onions

Instructions

  1. Preheat Oven: Preheat oven to 375°F (190°C).
  2. Prepare Meatloaf: In a large bowl, mix ground beef, breadcrumbs, egg, onion, garlic, ketchup, Worcestershire sauce, salt, and pepper. Press mixture into a greased baking dish and bake for 25 minutes.
  3. Make Potato Layer: Combine mashed potatoes with sour cream and cheddar cheese. Spread over the baked meatloaf.
  4. Add Toppings: Sprinkle bacon and cheddar cheese on top. Bake for an additional 15–20 minutes until cheese is melted and bubbly.
  5. Serve: Let it rest for 5–10 minutes. Garnish with green onions before serving.
