This Cowboy Meatloaf & Potato Casserole combines the classic flavors of meatloaf and mashed potatoes into one hearty and comforting dish. A savory ground beef base topped with creamy mashed potatoes, cheese, bacon, and green onions, baked to perfection.

For the meatloaf base:
- 1 pound ground beef
- ½ cup plain breadcrumbs
- 1 egg
- ½ cup diced onion
- 2 cloves garlic (minced)
- 2 tablespoons ketchup
- 1 tablespoon Worcestershire sauce
- 1 teaspoon salt
- ½ teaspoon black pepper
For the potato layer:
- 3 cups mashed potatoes (prepared and seasoned)
- ½ cup sour cream
- ½ cup shredded cheddar cheese
For the topping:
- ½ cup cooked and crumbled bacon
- ½ cup shredded cheddar cheese
- 2 tablespoons chopped green onions
Instructions
- Preheat Oven: Preheat oven to 375°F (190°C).
- Prepare Meatloaf: In a large bowl, mix ground beef, breadcrumbs, egg, onion, garlic, ketchup, Worcestershire sauce, salt, and pepper. Press mixture into a greased baking dish and bake for 25 minutes.
- Make Potato Layer: Combine mashed potatoes with sour cream and cheddar cheese. Spread over the baked meatloaf.
- Add Toppings: Sprinkle bacon and cheddar cheese on top. Bake for an additional 15–20 minutes until cheese is melted and bubbly.
- Serve: Let it rest for 5–10 minutes. Garnish with green onions before serving.

- You can use leftover mashed potatoes or instant potatoes for convenience.
