Ground Beef Mixture:
- 1 pound ground beef
- 1 small onion, chopped
- 2 cloves garlic, minced
Soup Base:
- 3 cups beef broth
- 1 (15 oz) can diced tomatoes
- 1 (15 oz) can whole kernel corn, drained
- 1 (15 oz) can green beans, drained
- 1 (15 oz) can pinto beans, drained and rinsed
- 2 cups peeled and diced potatoes
Seasonings:
- 1 teaspoon chili powder
- ½ teaspoon smoked paprika
- ½ teaspoon salt
- ¼ teaspoon black pepper
Instructions
- Prepare Ground Beef: In a large pot or Dutch oven over medium heat, cook the ground beef and chopped onion until the beef is browned and the onion is tender. Drain any excess fat.
- Add Aromatics and Broth: Add the minced garlic and cook for 1 minute. Stir in the beef broth, diced tomatoes, corn, green beans, pinto beans, potatoes, chili powder, smoked paprika, salt, and pepper.
- Simmer and Serve: Bring the mixture to a boil, then reduce the heat to a simmer. Cover and cook for 25–30 minutes, or until the potatoes are tender and the flavors have blended. Taste and adjust seasoning as needed. Serve hot with cornbread or crackers.
