Ground Beef Mixture:

  • 1 pound ground beef
  • 1 small onion, chopped
  • 2 cloves garlic, minced

Soup Base:

  • 3 cups beef broth
  • 1 (15 oz) can diced tomatoes
  • 1 (15 oz) can whole kernel corn, drained
  • 1 (15 oz) can green beans, drained
  • 1 (15 oz) can pinto beans, drained and rinsed
  • 2 cups peeled and diced potatoes

Seasonings:

  • 1 teaspoon chili powder
  • ½ teaspoon smoked paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Instructions

  1. Prepare Ground Beef: In a large pot or Dutch oven over medium heat, cook the ground beef and chopped onion until the beef is browned and the onion is tender. Drain any excess fat.
  2. Add Aromatics and Broth: Add the minced garlic and cook for 1 minute. Stir in the beef broth, diced tomatoes, corn, green beans, pinto beans, potatoes, chili powder, smoked paprika, salt, and pepper.
  3. Simmer and Serve: Bring the mixture to a boil, then reduce the heat to a simmer. Cover and cook for 25–30 minutes, or until the potatoes are tender and the flavors have blended. Taste and adjust seasoning as needed. Serve hot with cornbread or crackers.
