Ground Beef Mixture:
- 1 lb ground beef
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 can (10 oz) diced tomatoes with green chiles
- 1/2 cup barbecue sauce
- 1/2 teaspoon chili powder
- 1/2 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Additional Ingredients:
- 3 cups frozen tater tots
- 1 1/2 cups shredded cheddar cheese
- Chopped green onions or parsley for garnish (optional)
Instructions
- Preheat the Oven: Preheat the oven to 375°F (190°C).
- Cook Ground Beef: In a large skillet over medium heat, cook the ground beef with diced onion and garlic until browned and cooked through. Drain excess fat.
- Prepare Mixture: Stir in kidney beans, corn, diced tomatoes with green chiles, barbecue sauce, chili powder, paprika, salt, and pepper. Let it simmer for 5 minutes.
- Assemble Casserole: Transfer the beef mixture to a greased 9×13-inch baking dish. Arrange tater tots in a single layer over the top.
- Bake: Bake uncovered for 30 minutes.
- Add Cheese: Remove from the oven, sprinkle shredded cheddar cheese over the tater tots, and bake for another 10 minutes until cheese is melted and bubbly.
- Finish and Serve: Garnish with chopped green onions or parsley if desired. Serve warm.
Notes
- You can substitute pinto or black beans for the kidney beans.
- For a smokier flavor, add a dash of liquid smoke or use smoked cheddar cheese.
