Ground Beef Mixture:

  • 1 lb ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (10 oz) diced tomatoes with green chiles
  • 1/2 cup barbecue sauce
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Additional Ingredients:

  • 3 cups frozen tater tots
  • 1 1/2 cups shredded cheddar cheese
  • Chopped green onions or parsley for garnish (optional)

Instructions

  1. Preheat the Oven: Preheat the oven to 375°F (190°C).
  2. Cook Ground Beef: In a large skillet over medium heat, cook the ground beef with diced onion and garlic until browned and cooked through. Drain excess fat.
  3. Prepare Mixture: Stir in kidney beans, corn, diced tomatoes with green chiles, barbecue sauce, chili powder, paprika, salt, and pepper. Let it simmer for 5 minutes.
  4. Assemble Casserole: Transfer the beef mixture to a greased 9×13-inch baking dish. Arrange tater tots in a single layer over the top.
  5. Bake: Bake uncovered for 30 minutes.
  6. Add Cheese: Remove from the oven, sprinkle shredded cheddar cheese over the tater tots, and bake for another 10 minutes until cheese is melted and bubbly.
  7. Finish and Serve: Garnish with chopped green onions or parsley if desired. Serve warm.
