- 1 medium head cauliflower, cut into florets
- 1 can (14 ounces) diced tomatoes
- 1 can (14 ounces) coconut milk
- 1 cup vegetable broth
- 1 cup frozen peas
- fresh cilantro for garnish
- cooked basmati rice or naan for serving
Spice Mix:
- 2 tablespoons curry powder
- 1 teaspoon ground turmeric
- 1/2 teaspoon ground cumin
- 1/4 teaspoon cayenne pepper (optional)
Instructions
- Sauté Aromatics: Heat coconut oil in a large skillet. Sauté onion until soft, then add garlic and ginger.
- Add Spices: Stir in curry powder, turmeric, cumin, and cayenne pepper. Coat onions with spices.
- Cook Cauliflower: Add cauliflower, tomatoes, coconut milk, and broth. Simmer covered until cauliflower is tender.
- Finish Dish: Stir in peas, season with salt and pepper. Garnish with cilantro and serve hot with rice or naan.

- For added protein, stir in cooked chickpeas or tofu.
