  • 1 medium head cauliflower, cut into florets
  • 1 can (14 ounces) diced tomatoes
  • 1 can (14 ounces) coconut milk
  • 1 cup vegetable broth
  • 1 cup frozen peas
  • fresh cilantro for garnish
  • cooked basmati rice or naan for serving

Spice Mix:

  • 2 tablespoons curry powder
  • 1 teaspoon ground turmeric
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon cayenne pepper (optional)

Instructions

  1. Sauté Aromatics: Heat coconut oil in a large skillet. Sauté onion until soft, then add garlic and ginger.
  2. Add Spices: Stir in curry powder, turmeric, cumin, and cayenne pepper. Coat onions with spices.
  3. Cook Cauliflower: Add cauliflower, tomatoes, coconut milk, and broth. Simmer covered until cauliflower is tender.
  4. Finish Dish: Stir in peas, season with salt and pepper. Garnish with cilantro and serve hot with rice or naan.
