  • 3/4 cup freshly squeezed orange juice
  • 1/4 cup unsalted butter, melted
  • 1/4 cup vegetable oil
  • 1 large egg
  • 1 teaspoon pure vanilla extract

Additional:

  • 1 1/2 cups fresh or frozen cranberries (halved if large)
  • 1/2 cup chopped walnuts or pecans (optional)

Instructions

  1. Preheat and Prepare: Preheat the oven to 350°F (175°C) and grease/flour a 9×5-inch loaf pan.
  2. Mix Dry Ingredients: In a large bowl, combine flour, sugar, baking powder, baking soda, salt, and orange zest.
  3. Combine Wet Ingredients: In another bowl, mix orange juice, melted butter, oil, egg, and vanilla.
  4. Combine Mixtures: Add wet ingredients to dry, stir until just combined.
  5. Add Cranberries and Nuts: Gently fold in cranberries and nuts, if using.
  6. Bake: Pour batter into pan, bake for 50-60 minutes until a toothpick comes out clean.
  7. Cool and Serve: Cool in pan for 10 mins, then transfer to a rack to cool completely before slicing.
