Instructions

- Mix wet ingredients: In another bowl, whisk orange juice, oil, eggs, and vanilla until smooth.
- Combine ingredients: Add wet mixture to dry ingredients and gently stir until just combined. Fold in cranberries.
- Bake: Divide batter into muffin cups, sprinkle with coarse sugar if desired, and bake for 18-20 minutes. Cool before serving.
